Vanilla and Blueberry Protein Pancakes

And this is about to become our favorite pancake recipe!


Vanilla & Blueberry Protein Pancakes

Recipe by: Daily Dose Fitness & Coaching


4 egg whites
2 tbs coconut flour
1/4 cup buckwheat flour
3/4 scoop vanilla protein powder
35g frozen blueberries
10g agave syrup (optional – does add 8g more carbs)


Combine all ingredients in a bowl and either whizz with a hand held blender or use a food processor. I really think the key to a good protein pancake batter is that it has been mixed THOROUGHLY.

Heat a good quality non-stick pan on a low to medium heat and using a 1/4 cup, spoon some of the batter out of the bowl and into the pan. Cook until small bubbles appear on the surface then flip and cook for a further 45-60 seconds on the other side. This should yield 3 small pancakes.

Top with honey, agave, yoghurt or more berries, understanding that if you do so it will add to the macros of the meal which I have outlined below!

Serves one.
