Purple potato skins with spicy southwest flavored chicken, green onions and goat cheese. Fresh pineapple for dessert. (via our Instagram friend @FitMenCook)
(1) Bake purple potatoes in the oven until soft for about 20 minutes at 405F. (2) When they are soft, slice the purple potatoes in half. Remove about 2/3 of the insides and save for later use. (3) Put the potato skins back in the oven for about 8-10 minutes to harden. (4) In a skillet, season chicken breast with garlic, paprika, cayenne pepper and a few drops of Tapatio sauce. (5) Cut the chicken into pieces and place in the potato skins. Top with 1oz goat cheese and green onion.
