Bacon + Egg Cups

I created BACON + EGG CUPS!  And YES, they were AMAZING!


Bacon + Egg Cups


12 strips bacon (Canadian bacon or ham works too!)

12 eggs

Toppings of your choice!  I used:

Yellow peppers and onions, sautéed with garlic and coconut oil

Ground turkey seasoned with fennel, red pepper flakes, sage, pepper


Partially cook bacon in microwave, oven or on the stove.

Drain bacon real well on paper towels.

Wrap each muffin cup with one strip of bacon to create little “cups.”

Crack an egg inside every “cup.”

Top with peppers, onions and turkey sausage; or get creative!  Options are endless!

Bake 10-15 min at 375 F or until eggs are set.

That’s it’s!  That’s the drill!


I had more eggs in the house than bacon, so I made bacon-less egg cups as well.  I know, sad day.  But I got by.  Thanks for asking.


Store your bacon + egg cups in an air-tight container in the frig, and grab a couple each morning.  Easy breakfast! 


And just look how cute!!  Bite into one, and you’ll find a surprise!
