Southwest Quinoa

If you are weight training, running, crossfiting, kick boxing, cycling…you are an athlete, and you need to fuel.  Food is no longer just food or the enemy, it is a necessity.  And it’s a smart idea to integrate good, clean carbs into your diet that help support the work you are putting in.

One of the best clean carbs is Quinoa.  A grain-like crop grown primarily for its edible seeds, quinoa is a complete carb and protein source, making it an amazing fuel source.  You cook it a lot like rice or cous cous, and there is so much you can do with it.


We’re always swapping healthy solutions and recipes at work.  One of my coworkers made this quinoa dish for her family last week, and she says it’s a keeper!  It’s super easy to prepare.  Throw in some chopped chicken to make it a higher protein dish.  And leave out the cheddar and corn for a cleaner version.  Yummo!

Southwest Quinoa 


3/4 c quinoa, rinsed and strained

14 oz can black beans, drained

1 can rotel, or green chilies and diced tomatoes

1/4 c vegetable broth

1 c corn (optional)

1 c red and green pepper, chopped

1/2 t garlic powder

1/2 t cumin

1/2 t coriander

1 c shredded cheddar (optional)


Preheat oven to 400. Mix all ingredients except cheese in 2 qt. casserole. Cover with foil and bake for 30 min. Remove and stir. Continue baking covered for 20 min or until liquid is absorbed. If desired sprinkle with cheese and bake a few more minutes.
