Soft Cinnamon Banana Breakfast Cookies

Our newest Bod-ē babe, Amy, passed this recipe our way today. Made using coconut flour and almond meal, these cookies are Paleo and Grain Free. I love how Amy’s been opening her eyes to new foods, and hunted down this lovely recipe for us! Can’t wait to try it!

Soft Cinnamon Banana Breakfast Cookies

Oven: 350 degrees

1 C Almond meal
1/2 C of coconut flour
1/2 t of baking powder
1/4 t of baking soda
1 t of cinnamon
1/2 C of coconut oil
1/4 cup of raw honey melted
2 eggs
3 very ripe bananas

In a mixing bowl whisk together all of the dry ingredients. Mash the bananas. Melt the coconut oil and raw honey together and pour it over the bananas with the eggs and vanilla, mix well. Pour wet ingredients into the dry ingredients and mix well. Then, using a cookie scooper or melon baller, scoop the cookies onto a cookie sheet.

Bake approx. 12-15 minutes.
